Potluck/Baby Shower @ Janelle McDowall (Australia) Jan 16th, 2014
































The Potluck Luncheon/Baby shower today was great fun!

More than thanks to Janelle McDowall of Australia for her great hospitality. Janelle decorated her home in baby blue colors. Banners, balloons, the table was festive light blue covered, she has made a lof of effort to make the baby shower memorable for Magda and for us. In addition, thanks to Corinne for organizing the quiz with the subject pregnancy. One of the questions was: what size is Magda's pregnant belly!! 
Ladies also on behalf of Magda thank you so much for this cozy and funny Potluck Luncheon and Baby shower. Magda take care and next time please show your little baby boy.

Rolly - Poly by Conchita from Spain

Ingredients:
(for a baking tray of 25 x 18 inches)

7 large eggs (split in white and yolks)
7 tbsp of sugar
7 tbsp of flour
and grated lemon rind

In a bowl beat 7 tbsp of sugar with 7 yolks wit a hand held electric beater.
In another bowl whip egg whites until stiff peaks form.
Put together both and add 7 tbsp of flour and grated lemon rind.
Preheat oven to 250 degrees F.
Cover the baking tray with parchment paper and pour the mix in.
Bake for 15 minutes (just until it begins to brown).
Meanwhile soak a fabric (size of the baking tray) in cold water and stretch it on the work top and sprinkle sugar over the fabric and pour over the cake (still hot) and remove the parchment paper.
Roll with fabric helped the cake using the fabric roll up the cake and keep it enrolled for 10 minutes.

Filling: whipped cream, chocolate mousse, fruit with cream

Company Chicken Casserole by Lynn Coles, USA


Company Chicken Casserole
(This is very similar to the casserole we had at the Admiral's house in Norfolk.)

1 cup chopped cooked chicken
1 cup chopped celery (I omit)
1 cup cooked rice
1 can cream of chicken soup
2 T grated onion
3/4 cup mayonnaise
1 cup diced water chestnuts
1/2 cup sliced almonds (I put on the top only)
1 cup crushed cornflakes (or breadcrumbs)
2 T melted butter or margarine

Combine chicken, celery, rice, soup, onion, mayo, water chestnuts and almonds in bowl.  Mix well.  Spoon into 2 qt baking dish.  Top with cornflake crumbs and butter.  Bake at 350 degrees for 45 minutes.  Makes approximately 6 servings.  Comfort food!
