Company Chicken Casserole by Lynn Coles, USA
Company Chicken Casserole
(This is very similar to the casserole we had at the Admiral's house in Norfolk.)

1 cup chopped cooked chicken
1 cup chopped celery (I omit)
1 cup cooked rice
1 can cream of chicken soup
2 T grated onion
3/4 cup mayonnaise
1 cup diced water chestnuts
1/2 cup sliced almonds (I put on the top only)
1 cup crushed cornflakes (or breadcrumbs)
2 T melted butter or margarine
Combine chicken, celery, rice, soup, onion, mayo, water chestnuts and almonds in bowl. Mix well. Spoon into 2 qt baking dish. Top with cornflake crumbs and butter. Bake at 350 degrees for 45 minutes. Makes approximately 6 servings. Comfort food!

Tom Yam Kung (Hot and Sour Shrimp Soup)
Ingredients:
3 cups water or light chicken stock
250 g. shrimps
5 kaffir lime leaves
2 stalks of lemon glass (lower 1/3 portion only, cut into 1 in. lengths, coarsely pounded
5 hot Thai chilli peppers
1/2 cup sliced straw mushrooms
1/4 cup lime juice
1 tbs chopped coriander leaves
4 tbs fish sauce
Method:
Bring the stock to boil over medium heat. Add lime leaves, fish sauce and lemon grass, then the mushrooms and chilli pepper, simmer for 2 minutes. Add the shrimps and reheat to boiling. Cook until the shrimps are pink. When the shrimps cooked, place the lime juice in a serving bowl. Pour the soup into the bowl, stir and garnish with coriander leaves

first: fill the vanilla ice creme in a bowl
second: the thawed berries
third: the crushed Meringues
forth: beaten heavy cream
